The future for fish food

Fish leave a much smaller carbon footprint than meat from cows, pigs or even chicken and should be regarded as a real alternative to traditional meat products.

If you want to limit your meat consumption, plant-based, vegan alternatives have long been the go-to foods, but also fish could play a much larger part in the fight to limit meat consumption worldwide.

Britt Vernegren-Kærn from Blue Circle Foods gives us the rundown of their fish innovations: the fish hamburger, the fish sausage, the fish nugget, and minced fish meat.

 

The fish burger

What is it?

A fish burger

How is it new?

This is a pure product: it contains only fish, salt, and pepper. There is no modified starch or preservatives. The processing method is completely different from what you normally see when it comes to fish, which makes the texture of the meat resemble beef more than fish.

Who is the target group?

People who care about the environment, people with food allergies. Someone who likes to grill hamburgers and would like an alternative to the traditional ones.

What problem does it solve?

As it resembles a beef steak in texture, this is a great eco-friendly alternative to the traditional hamburger. It contains no added hormones, antibiotics, or sugar, As the product is free from gluten, it is perfect for people with gluten allergy and other food allergies as well.

 

The fish nugget

What is it?

This product is called Happy fish. It’s a fish nugget.

How is it new?

This is a new take on the traditional chicken nugget. These cute fishcakes are shaped like small fish and come in two varieties: cod, or salmon. It’s a clean product made only from fish, salt, pepper, and lemon and without any additives. There are no added hormones, antibiotics, GMOs, and no added sugar. As there is no breadcrumb coating, the product contains no gluten. It has won The Innovation Award in the United States

Who is the target group?

Mainly children and others who enjoy eating chicken nuggets and fish fingers.

What problem does it solve?

It provides a clean, healthy alternative to the traditional chicken nugget. The product contains no gluten contrary to e.g. fish fingers.

 

Minced fish meat

What is it?

Minced fish meat of either salmon or cod.

How is it new?

Contrary to other minced fish meats, this product contains only pure fish and a bit of salt. The structure of the minced fish meat makes it easy to use as it binds together easily and makes great hamburgers for example.

Who is the target group?

The average consumer who cares about climate footprints and wants to live without additives.

What problem does it solve?

As this type of minced fish meat binds well together it solves the problem of making hamburgers and meat balls out of fish meat without them falling apart when cooked.

 

Fish sausages

What is it?

Fish sausages

How is it new?

These sausages made from fish meat contains nothing but fish, salt, and spices.

Who is the target group?

Anyone who would like to replace some of their meat with fish. The sausages are great for hotdogs.

What problem does it solve?

The sausages are a good alternative to regular hotdogs made from pork or beef. As they contain nothing but fish, salt, and spices, they are allergy friendly.
